Today (February 18) is National Drink Wine Day, a perfect day to roll out the red (or white) carpet for the new wine menu in Cabaret Jazz. The new selections, courtesy of Matthew Dunbar, Culinary Arts Catering director of food and beverage operations, are a varied blend of white, red and sparkling wines that complements the experience of the intimate venue.
“We’ve been developing it for a couple of months, a lot of tastings,” says Dunbar. “We wanted to make it something a little bit unique, a fun menu.” The unofficial debut of the menu was February 12.
The key was diversity, reflecting the range of music and artists performing in Cabaret Jazz, from the smoky stylings of pop/soul singer Lucy Woodward to the dapperness of Broadway star Cheyenne Jackson to the intensity of Latin jazz trumpeter Arturo Sandoval. From Dunbar’s perspective, the menu should carry the tone of the artists.
Another factor was value: “We really wanted to create something that was both affordable, yet provided strong depth. Its aim was to be able to satisfy anything from the most novice wine drinker to the expert wine connoisseur,” says Dunbar.
One of Dunbar’s favorites for the connoisseur: Mauro Basto Reserva from Portugal. “It’s not something that you see daily, but it is the same grape that’s actually used to make Port wine. It has strong fruit components to it, but it’s got enough body that it holds up to that fruitiness.”
Wines for the connoisseur are just part of the mix. It’s equally important to Dunbar to offer wine for every palette. “From Chilean Carmenere, to Italian Primitivo (Zinfandel), to a variety of chardonnay offerings both oaked and unoaked, to a variety of Sauvignon Blanc options from around the world, we think this new menu will bring something fresh, fun, and exciting to Cabaret Jazz,” Dunbar says.
